From the kitchen
It begins with the dough
Flour, water, salt and time — proved overnight, stretched by hand at the pass and finished on the stone. It is the same dough behind the bread on the board, the pasta beside it and every pizza that leaves our oven. We mix it before the lake wakes and let it rest through the afternoon, so the crust comes out light, blistered and faintly sour. Nothing in this kitchen is older, and nothing has changed less.
